Zesty shrimp Poblano Taco with kiwi salsa and lime cream

I am a big fan of seafood because of its many health benefits, and shrimp are one of my favorites. I love finding new ways to use shrimp in easy, healthy meals (and you know how I love quick and easy meals!). This poblano shrimp recipe checks all my boxes. It is easy to prepare, but has many different tastes and feels like a special dish in the restaurant. I like to do it on busy weekdays when everyone is tired, but we want to eat something tasty.

Healthy tacos for victory!

Tacos are a favorite for many (including my family!), So creating a healthy tacos is a must. So they are pretty easy to upgrade actually. I use healthy cooking oil (such as coconut, avocado or olive oil) instead of poor quality vegetable oils.

I also use healthy meat from healthy animals (we often get this from Wellness Meats).

Spices and vegetables that go with tacos are always a healthy choice, so there is nothing to change there.

Finally, tortillas are often the most difficult to upgrade. Since we don’t eat grains, I usually use lettuce, grain-free tortillas like these, or make homemade tortillas.

How to make Poblano Tacos from shrimp

As I mentioned, these tacos are incredibly easy to prepare. Here are the basic steps:

  • Mix the ingredients of the salsa and set aside (this helps to mix the flavors).
  • Mix the cream ingredients and set aside (again to blend the flavors).
  • Cook shrimp with spices and vegetables.
  • Assemble the taco on top with salsa and cream.

They are so simple that my children often help cook shrimp and assemble tacos. This is a perfect recipe for impatient chefs who may not yet have the skills to make more modern dishes.

One of my favorite things about tacos is that they can be very flexible. Change a few of the ingredients and you will have a whole new (and delicious) food. Here are some taco recipes to try:

  • Taco Scramble – This recipe adds the flavor of taco to a simple stirrer. It is great for breakfast or dinner and includes lots of fresh vegetables!

  • Fish Tacos in Cabbage Leaves – Another option is to serve fish tacos in cabbage leaves. Cabbage has many nutrients, so they are a great alternative to cereal tortillas.
  • Mexican bowls of beef and rice – Another simple recipe, this is great when you don’t want to worry about tortillas or lettuce. This one is cooked in the instant pot and is ready in less than 30 minutes.
  • Chicken Fiesta Salad – Salads are a great way to get the taste of tacos without clutter. This one is delicious with homemade guacamole and can easily be made in a mason jar for dishes on the go.
  • Taco al Pastor – pork taco, made fresher with the addition of pineapple and coriander

While these recipes are as simple as they turn out, sometimes I don’t even have the time or energy to eat easily. If I long for tacos but don’t have the time or energy, I quickly gather a leftover Mexican-inspired dish. I will throw some homemade spice with taco on the leftover chicken or beef and add the meat salad and some avocado. Is tasty!

Shrimp Poblano Tacos with kiwi salsa

Ingredients

For making kiwi salsa

  • 1 cup Red onion (in cubes)
  • 2 Roma tomatoes (finely chopped)
  • 2 kiwi (peeled and diced)
  • 1 var (squeezed, divided)
  • 2 stems coriander (finely chopped)
  • ¼ h.h. garlic powder
  • ¼ h.h. sol
  • 1 dash pepper

To make such a filling of shrimp poblano

  • 2 TBSP olive oil
  • 1 white pepper (finely chopped)
  • 1 lb shrimp (peeled and boned)
  • 1 TBSP spice of chili lime
  • tortillas

Instructions

  • Make the salsa by mixing 2 tablespoons diced onion, tomato, kiwi, juice of half a lime, coriander, garlic powder, salt and pepper.

  • Set aside.

  • Make the cooked cream by mixing together the juice from the other half of the lime and the sour cream.

  • Set aside.

  • Heat olive oil in a large skillet over medium heat,

  • Add the remaining onion and pepper.

  • Saute for about 10 minutes, until the onion is soft and browned.

  • Add the shrimp and chili lime spices.

  • Cook for about 8 minutes or until the shrimp are just cooked.

  • Serve in tortillas, garnished with salsa and cream.

Notes

Try serving these as a lettuce salad if you are not making tortillas.
