Have you ever heard the saying “A cup of garlic soup a day keeps the doctor away”? Okay, maybe that’s not exactly the saying, but in my book, this garlic soup is a case where good health and good taste come together!

Garlic is a wonderful herb and culinary ingredient that I always keep in the kitchen in some form. Cultures around the world have valued garlic for thousands of years for both its taste and its powerful healing properties. I often reach for garlic when I get sick and even take it raw on a spoon when I feel the disease coming.

Swallowing raw garlic may not always sound the best, so I decided to come up with a hearty and healing garlic soup that was also pleasing to the palate.

Delicious and healthy garlic soup for a moment

Garlic soup is a traditional recipe that is found in several different cultures (Spanish, French, Polish and Mexican). It is valued for its ability to protect against disease. Knowing the health benefits, I wanted to recreate the garlic soup I made in a restaurant (probably with not the healthiest ingredients) for the upcoming cold and flu season. I based this adaptation of a recipe I found in an old French cookbook.

What surprised me the most was the delicious and spicy taste of this soup. I expected a great taste of garlic, but the added step of roasting the garlic creates a rich and almost slightly sweet taste. I bake several heads of garlic at once, so I often have roasted garlic in the fridge, which makes this recipe even easier. This is a simple recipe to prepare if you do not have on hand.

I’m quite a practical chef and I’m not a fan of complicated recipes (hence the recipes with a low degree of preparation, with a pan in my cookbook). This mixed soup matches the bill. Bake garlic cloves (I make it in batches and freeze) and add chicken broth, herbs and a little canned coconut milk (or plain milk if optional) for creaminess. Mix in a saucepan with an immersion blender (this is a tool I could not live without) and serve.

Serve with a salad of garnish and you have a super healthy lunch or dinner, ready!

The benefits of garlic to boost immunity

It turns out that the use of garlic to prevent disease is not only in folklore (or in the mind of a crunchy mother). Science supports garlic’s claims to glory!

This soup is a great way to consume more garlic, especially during the cold and flu season, but here are some other great ways to take advantage of garlic:

  • Add dry garlic powder or granules to soups, sauces, dips or dressings.
  • Roast garlic cloves, mash and mix with butter or ghee mixed with herbs. Serve on roasted vegetables or cauliflower rice.
  • Chop 2-4 cloves of raw garlic and let stand 5-10 minutes for best benefits. Consume by taking a small spoon at once and wash it with water.
  • For children, mix finely ground garlic in a little raw honey to “help the medicine drop.”
  • You don’t like garlic? (It’s hard for me to imagine, but for everyone!) I like these garlic capsules and take them from time to time when I need extra stimulus (although not when I’m pregnant or breastfeeding).

Recipe for garlic soup

Caramelized roasted garlic is the star of this fragrant and creamy soup. It is easy to prepare for soothing food at any time or for additional immunity!

Ingredients

For garnish (optional):

  • 2 TBSP fresh parsley (minced)
  • ¼ cup fresh onion (chopped)
  • 1 fresh lemon (cut into wedges)

Instructions

  • Melt the butter in a large saucepan.

  • Add the chopped onion.

  • Fry over medium heat, stirring constantly, until the onion is translucent and golden.

  • Add the herbs and spices and fry for another 2 minutes

  • Add the roasted garlic and stir to combine.

  • Add the chicken broth and simmer.

  • Simmer for 15 minutes.

  • Reduce heat to low and add coconut milk.

  • Using a stainless steel immersion blender, carefully blend the soup until smooth.

  • If desired, garnish with fresh parsley and chives and squeeze a slice of lemon on each bowl. Serve warm.

Notes

Store 4-5 days in the refrigerator.
The roasted garlic recipe that requires this soup uses 10 heads of garlic. Only half is used for this soup. Freeze the rest or use it in salad dressings, fried fried products, roasted vegetables or cauliflower puree.
