I have always allowed my children to help in the kitchen when I cook. It was important to me that they were confident in their ability to prepare their own healthy meals. The extra spills and clutter I dealt with when they were young was a perfectly reasonable price to pay for the skills they have now.

But so many years ago, I didn’t realize that my determination to prepare them for their own future would make my future easier. They are all still young enough to live at home, but the older ones can cook dinner a few nights!

This recipe for cookies with coconut chocolate without baking is the result of letting them test their skills in the kitchen. I don’t make desserts often, but when I do, I usually stick to low-sugar or sugar-free options, such as chia seed pudding. Then I remembered the non-baking cookies I made as a child with my mother. These slightly healthier ones are the result of my children’s experiments.

Healthy cookies? Coconut chocolate cookies without baking are!

Well, still relatively healthy. Healthier than the original for sure. If you haven’t heard of cookies without baking, here’s the spoon – the cookie spoon.

My mother made cookies without baking by boiling butter, a little milk, sugar and cocoa powder in a saucepan. After a few minutes, she mixed oatmeal, peanut butter and vanilla extract. Cookies are called non-baking because the mixture is scooped onto a baking tray lined with parchment paper and left to set.

As a cookie, that’s not so bad, is it? Whole grains of oatmeal, peanut butter for protein. However, I don’t like to use too many grains, so I decided to change it a bit. The end result was delicious.

Grain-free cookie substitutes without baking

  • Coconut instead of oats – still a lot of fiber and minerals without cereals.
  • Almond or other nut oil instead of peanut butter – the same texture, pleasant nutty taste and protein. Although I don’t really have a problem with natural peanut butter, I prefer properly cooked nuts to legumes most of the time. The fun part of this replacement is that you can use any type of nut oil you like!
  • Honey or maple syrup instead of refined white sugar “I know honey and maple syrup are still sugar.” But I like that I can easily find organic and minimally processed. And since they naturally taste sweeter and because we just like things to be a little less sweet, I can use a lot less than the original recipe.

We also experimented with adding chopped nuts, chia seeds, pumpkin seeds and chopped dried fruits to the recipe. They all worked really well. As long as you follow the basic proportions of the ingredients, there are endless ways to mix this recipe.

Recipe for coconut cookies without baking

Non-baking cookies made with coconut instead of oatmeal for extra protein and fiber. Make them without dairy products, using coconut oil instead of butter and mix them by adding your favorite nuts.

Ingredients

  • ½ cup butter (or coconut oil)
  • ½ cup Maple syrup (or honey, or coconut sugar, or stevia drops to taste)
  • ¼ cup cocoa powder (or cocoa powder)
  • 1 tsp vanilla extract
  • 1/3 cup Almond oil (pecan or tahini oil)
  • 2 cups grated coconut (unsweetened, up to 3 cups may be needed)

Instructions

  • Melt the butter or coconut oil in a large saucepan.

  • Mix the sweetener and cocoa powder and simmer.

  • Simmer for 2-3 minutes, but be careful not to burn.

  • Remove from the heat and mix with the vanilla extract and nut oil.

  • Add two cups of coconut and stir to combine. Add more coconut, if necessary, until the finished mixture is thick but still slightly wet.

  • Use a spoon to scoop the mixture onto parchment paper or a silicone-lined baking tray the size of a cookie.

  • Allow the cookies to stand at room temperature until firm or cool in the freezer for 15 minutes until they harden.

  • Store in an airtight container in the freezer until ready to eat to maintain texture.

Notes

How quickly they harden at room temperature depends on the temperature and humidity.
To make these cookies really delicious, sprinkle them with chopped or chopped nuts, orange peel from organic oranges or sprinkle with coarse sea salt immediately after scooping.
