Tacos al Pastor Recipe with pineapple and coriander

Who doesn’t love Mexican food? Seriously, is there anyone who doesn’t? Anyway, I know my family certainly does. These bowls of beef and rice are one of our favorite pastimes during the week. And the kids are always excited about the guacamole breakfast. And if we can have delicious taco trucks at home, that’s a clear victory.

Taco al pastor are a great mix of spicy, salty, sweet and spicy. I marinate pork in a sweet and spicy marinade, cook it and shred it to put in a taco. The kids give me two thumbs up and say you should try.

What are Taco Al Pastor?

Translated tacos pastor are shepherd tacos. Maybe Irish shepherds eat a shepherd and Mexican shepherds eat a shepherd’s tacos?

Seriously, however, the traditional tacos pastor does not look like a shepherd’s pie at all. The meat is more like a Mexican version of Lebanese shawarma or Greek gyros. Toss the meat in the tortilla with some other garnishes and you will have taco al pastor.

To do this, marinate the pork in the marinade of pineapple and adobo pepper for at least an hour. Then choose a cooking method. The pork for the traditional taco al pastor is roasted on a skewer.

Skewers frying substitutes

I don’t have a skewer on which to roast meat. Most home cooks don’t. But there are other ways to get such a delicious taste at home. Here are the three methods I used:

  • Smoker / pellet grill: My favorite method. It takes much longer than any other method, but is closest to baking spit and has an amazing taste.
  • Instant Pot: Instant Pot is a great tool for hand cooking and quick cooking of large pieces of meat. If you choose this method, fry the grated pork for a few minutes to achieve the crispy roast texture you would get from roasting on a skewer.
  • Oven: This method is the fastest because you will cut the marinated pork and fry it in a pan.

Assembling Your Taco

One of my family’s favorite things about taco is that everyone can outdo their own. I offer different topping options depending on what I have on hand and what is in season. Our fish tacos and fish tacos salad are different every time we have them.

Usually taco pastor is served with extra fresh or grilled pineapple, diced red onion, coriander and avocado. We also really like this taco glory.

We don’t usually eat a lot of grains, so sometimes when we have tacos, we serve them in lettuce leaves. However, I’m still thinking of making tortillas.

Mexican style recipe Al Pastor Tacos

Tacos al Pastor are a mixture of sweet, spicy, spicy and savory. Top with pineapple, onion and coriander for a nice meal for the crowd.

Total time 2 o’clock 25 minutes

Ingredients

  • 5-6 lbs boneless pork shoulder (or Boston’s ass)
  • 1 pineapple (core and cut, split)
  • 1 average onions (peeled and cut)
  • 2 cloves garlic (or 1 teaspoon of garlic powder)
  • ½ cup pineapple juice
  • ¼ cup coconut amino acids
  • 1 TBSP vinegar
  • ½ cup Orange juice
  • ½ cup Maple syrup
  • 1 var (squeezed)
  • 2 hot peppers in adobo sauce
  • 1 TBSP cumin
  • 1 h.h. paprika
  • 1 h.h. sol
  • 1 h.h. pepper
  • 2 TBSP so spice

For serving:

  • tortillas
  • Red onion (in cubes)
  • coriander (chopped)
  • avocado (chopped)

Instructions

To make the marinade:

  • In a blender, mash 1 cup chopped pineapple and all other ingredients.

  • Pour the marinade over the pork and marinate in the refrigerator for at least an hour or up to 8 hours, turning every few hours.

Instant Pot: (the easiest method)

  • Add the pork and marinade to the Instant Pot.

  • Cover and place to seal.

  • Cook on high pressure for 45 minutes and allow the pressure to release naturally.

  • Use two forks to grate the pork and place it on a large baking sheet.

  • Finely chop another cup of pineapple and add it to the pork.

  • Place the baking sheet under the broiler in the oven for 5-7 minutes until browned and the pineapple begins to caramelize.

  • Remove and serve.

Pellet grill: (the tastiest method)

  • Preheat the grill or pellet smoker to 250 ° F.

  • Place the pork directly on the grill.

  • Cook for 5 hours at an internal temperature of 160 ° F.

  • Remove and place on a large piece of foil.

  • Spread with additional maple syrup and add 1 cup of fresh pineapple, finely chopped.

  • Wrap the pork tightly in foil and return it to the grill.

  • Cook for another 3-4 hours at 275 ° F until the internal temperature reaches 200 ° F.

  • Remove and let rest for half an hour.

  • If desired, roast fresh pineapple slices directly on the grill until caramelized and serve on the pork.

Fireplace: (the fastest method)

  • Cut the pork into thin (½ inches or less) slices.

  • Heat a large skillet or grill pan over high heat.

  • Working in batches, bake each piece for 3-4 minutes on each side until charred and cooked.

  • Remove and set aside.

  • Fry another 1 cup of pineapple in the same pan until caramelized and place on top of the pork.

  • Let both rest for 5 minutes and then chop finely.

To serve:

  • Serve in tacos.

  • Top with extra fresh pineapple, red onion, coriander, avocado and other garnishes of your choice.

Notes

You can replace the chicken legs with pork if you wish, but adjust the cooking time accordingly.
